Gingersnap Cookie Sandwiches


  • 1 ½ Cups Shortening
  • 2 Cups White Sugar
  • 2 Eggs
  • ½ Cup Molasses
  • 4 Cups of sifted Unbleached Flour
  • 2 tsp Baking Soda
  • 2 tsp Cinnamon
  • 2 tsp Cloves
  • 2 tsp Ginger


Cream the shortening and sugar. Once creamed, add in both eggs – blending the mixture. Add the sifted dry ingredients to this mixture. (The dough texture should be thick, not runny.)

Place in the oven at 375 degrees F for 10-13 minutes. Yields 5 dozen.
