Yogurt Parfait

Granola Ingredients:

  • 3 cups old-fashioned oats
  • 1 cup hulled raw pumpkin seeds
  • 1 cup hulled raw sunflower seeds
  • 1 cup unsweetened coconut chips
  • 1 ¼ cup raw pecans, either whole or coarsely chopped
  • ¾ cup pure maple syrup
  • ½ cup extra-virgin olive oil ½ cup packed light-brown sugar
  • 1 teaspoon coarse salt

Granola Directions:

  1. Heat oven to 300F degrees
  2. Mix all above ingredients into bowl
  3. Once mixed well place granola on baking sheet evenly
  4. Cook for 45 minutes. While in oven stir every 10-15 minutes
  5. Remove and ready to eat

Yogurt Parfait Ingredients:

  • Greek yogurt
  • Mangos
  • Apples
  • Pomegranate seeds
  • Granola

Yogurt Parfait Directions:

Fill bowl with one serving of Greek yogurt, top with granola and pomegranate seeds. Serve with sliced mangos and apples.
