Zucchini Noodles with Pesto and Ragout

Ingredients & Instructions

Pesto:

  • Handful of basil leaves
  • 1/2 cup toasted pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1 garlic clove
  • 1/2 cup extra virgin olive oil

Mix all together in food processor.

Ragout:

  • 1/2 lb ground beef (80% lean)
  • 1/2 lb. ground pork or lamb
  • 1 can crushed tomatoes
  • 1 garlic clove, peeled and crushed
  • 1 tbsp dried oregano
  • 1/2 onion finely diced
  • 1 carrot finely diced
  • 1/2 cup red wine or balsamic vinegar
  • Salt and pepper

Instructions

Use spiralizer on 1 large zucchini and toss with pesto. Top with hot ragout and more Parmesan to taste.
