Five Spice Pickled Carrots


  • ½ cup Distilled White Vinegar
  • ½ cup Water
  • ¼ cup Fresh Lemon Juice
  • ½ tsp Kosher Salt
  • 2 TBS Sugar
  • 1 tsp Five Spice Powder
  • ½ tsp Ground Ginger
  • 1 tsp Whole Peppercorns
  • 1 Clove Garlic, peeled & sliced thin
  • 3 medium Carrots


  1. Wash, trim and peel carrots then cut into two equal pieces, about the height of your mason jar
  2. In a small saucepan, bring all ingredients except carrots to a boil, stirring to dissolve sugar.
  3. Reduce heat and simmer liquid for 5 minutes
  4. Carefully pour transfer hot liquid to mason jar with carrots
  5. Add enough liquid to cover the top of carrots
  6. Let cool to room temperature
  7. To use suction top, wipe down rim of the jar, place suction tool on top of jar and seal tight
  8. Refrigerate for at least 10 hours
