Fresh Refrigerator Pickles

Ingredients:

  • 1 English Cucumber
  • ¼ Green Bell Pepper, sliced into strips
  • ¼ White Onion, sliced into strips
  • 3 sprigs Fresh Dill
  • 1 ½ tsp Kosher Salt
  • ½ tsp Whole Peppercorn
  • ½ tsp Celery Seed
  • 1 tsp Mustard Seed
  • ½ cup Sugar
  • ¾ cup Apple Cider Vinegar
  • ¼ cup Water

Directions:

  1. Wash cucumber thoroughly and cut into three equal pieces, about the height of your mason jar
  2. Place cucumbers, onion, dill, and bell pepper in a 1 pint mason jar, standing upright
  3. In a small saucepan, combine water, vinegar, spices, and sugar and bring to a boil
  4. Reduce heat and simmer for 5 minutes
  5. Carefully pour hot brine over vegetables
  6. Gently tap the jar to remove air bubbles
  7. Seal the jar by tightly screwing the lid on
  8. Let cool to room temperature
  9. Chill in refrigerator for at least 6 hours
  10. Enjoy!
